Simple Banana Bread

Hi everyone!!  I can't believe I haven't posted in over three weeks!  Life just seems to get busier and busier, and you probably all know that the longer we go without blogging, the harder it is to get back in the groove.  I've missed you all, though, and I've missed my humble little blog.  
 
Today I'm sharing a recipe for banana bread.  This recipe is oh, so simple and really quite good.  My hubby came home from work while it was still baking and remarked, "That banana bread smells really good!"  It did smell incredible, folks.  I used to make banana bread a lot when our son was growing up, but I don't remember it ever smelling this good.  Most cooks seem to have a recipe for banana bread in their files, but I still recommend you give this one a try.  It doesn't call for anything fancy like chocolate chips, cream cheese, or sour cream, no streusel, or glaze for the top -- just the basics. I found the recipe here at Simply Recipes, a website with some very good-looking recipes.  
 
 
          Ingredients:
  • 2 to 3 very ripe bananas, peeled (I used 2 1/2)
  • 1/3 c. melted butter (approximately 5 T.)
  • 1 teas. baking soda
  • Pinch of salt
  • 3/4 c. sugar (can also use 1 c. or 1/2 c.)
  • 1 large egg, beaten
  • 1 teas. vanilla extract
  • 1 1/2 c. all-purpose flour
  1. Preheat the oven to 350° (325° if using a glass loaf pan). 
  2. Grease or spray with Pam a standard size loaf pan or two mini loaf pans.
  3. In a mixing bowl, mash the bananas until completely smooth (I used a potato masher).  Stir melted butter into mashed bananas.
  4. Next add the baking soda and salt to bananas and melted butter.  
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in flour last.
  7. Pour batter into greased loaf pan (or mini pans).  Bake for 50 min. to 1 hour at 350° -- until a tester inserted into the center comes out clean.  **I used 2 glass, mini loaf pans and baked for 43 min. at 325°.**
  8. Remove from oven and let cool in pan for a few minutes.  Remove bread from pan(s) and let cool on wire rack.
 

Mash bananas,


and stir in melted butter.


Add the baking soda and salt; then stir in sugar, egg, and vanilla extract.


Add flour last.


Pour batter into greased loaf pan (or pans) and bake.


Remove from oven and let cool in pan for a few minutes.


Remove the bread from pans and cool on wire rack.


Yum -- golden brown deliciousness.  These were soft, moist, and sweet without being too sweet.  Sometimes simple really is best, isn't it?  I do hope you'll give this recipe a try and let me know what you think.

  2. I agree! This is very close to my recipe. I like that yours uses butter where mine uses oil.

  3. Yes Denise, simple is best! I'm sure your house smelled heavenly, and that the bread tasted delicious. Now you have me wanting to make some banana bread. Hope you're having a good Spring. I keep hearing about a dam that's about to give way in NC. I hope it's not near you.

  4. I'm ashamed to say I haven't made it from scratch in a long time but I do love it and can catch a scent of it even now as I read your post! By the way I hadn't even noticed your typo--or the computer's--til you mentioned it! Yes we've sure had a rainy spell!
